Chicken from the oven

Perfect if you're cooking for a crowd, want to put something spectacular on the table, but don't want to spend the whole evening in the kitchen. The chicken is super easy to prepare. Don't skimp on the spices—more is more!!!🍗🥔

Ingredients :
For the chicken:
1 whole chicken (for example from Sligro)
16 grams of BBQ rub from Sligro, you can use a small bag if you don't want a whole jar
2 tbsp paprika powder
2 tbsp cumin powder
3 tbsp brown caster sugar
2 tbsp onion powder
2 tbsp garlic powder
1 tbsp olive oil
Sprigs of rosemary
Ovenproof thermometer

For the potatoes:
500 grams of baby potatoes
4 cloves of garlic
1 tbsp olive oil
1 tbsp paprika powder
1 tbsp salt
Pepper to taste
Sprigs of rosemary

Preparation method :
Combine the BBQ rub ingredients. Rub the chicken with a little olive oil and spread the spice mixture evenly over the chicken, making sure to thoroughly coat every nook and cranny. Reserve a small amount of the spice mix for later.

Searing chicken:
Heat a large pan and brown the chicken on both sides until golden brown. Place the chicken in a baking dish and rub with the remaining spice mix.

Insert an ovenproof thermometer into the thickest part of the chicken (for example, the breast). Place the chicken in the oven at 300°F (145°C) and bake for about 2 hours, or until the internal temperature reaches 160-175°F (70-75°C).

Baby potatoes:
Boil the baby potatoes for 10 minutes and halve them. Toss them in a baking dish with olive oil, paprika, salt, pepper, and the garlic cloves (in their skins). Top with a few sprigs of rosemary. Place the potatoes in the oven with the chicken for the last 15 minutes of cooking.

Remove the chicken from the oven, let it rest for 5-10 minutes, and then carve it. Serve with the crispy baby potatoes and garlic.
