Fluffy pancakes
Treat yourself or those around you this weekend to these fluffy brunch pancakes. Can you picture it? Enjoying these pancakes on a sunny Saturday or Sunday morning🌞

Ingredients for 2 people:
- Red fruits: strawberries, raspberries, blueberries, whatever you like
- Nutella
- Powdered sugar
- 3 eggs: note that you have to separate these
- Sugar
- 2 tbsp milk
- Vanilla sugar (1 tsp)
- Flower
- Baking powder or baking soda (half tsp)
-Olive oil or butter
1. Grab two bowls and separate the eggs, placing the egg whites in one and the yolks in the other. Be careful not to get any yolk in the egg whites, and make sure the bowl is grease-free (otherwise the egg whites won't stiffen). Add 3 tablespoons of sugar to the bowl with the egg whites and beat with a hand mixer until stiff peaks form, holding the bowl upside down without any drops (only try this if you're sure it's working 😉).
2. Add 2 tablespoons of milk and 1 teaspoon of vanilla sugar to the bowl with the egg yolks. Mix with a hand mixer. Then add 50g of flour and half a teaspoon of baking powder and mix again. Fold this mixture into the stiff peaks with a spatula or spatula, and your batter is ready.
3. Place a frying pan over medium heat. Pour a little oil onto a paper towel and grease the pan. Spoon three generous dollops into the pan (I only did three at a time, otherwise you'd end up with a very large pancake). Cook for a few minutes until it starts to smell like a cooked pancake. Then, flip the pancakes with a large spatula. Be careful not to flip them in one motion, otherwise you'll push the whole pancake out of its pan. Cook the other side. After 2 minutes, add a little water to the pan (about 1/3 cup) and let the pancakes steam over LOW heat with the lid on.
4. Finally, scoop the pancakes onto a plate, spread with Nutella, add the fruit, and top with a dusting of powdered sugar. Enjoy!😋
