Oysters with luxurious toppings

A wonderful appetizer for your Christmas dinner or New Year's Eve! With three surprising toppings, you can transform your oysters into a luxurious tasting experience full of flavors. 🀍

Ingredients:

Basic:
β€’ Fresh oysters (number depends on guests)

Avocado cream & basil oil:
β€’ 1 avocado
β€’ 1 tbsp mascarpone
β€’ Juice of half a lime
β€’ 1 tsp salt
β€’ 2 tbsp cooking cream
β€’ 40 g fresh basil
β€’ 100 ml sunflower oil

Asian showstopper:
β€’ 1 finely chopped shallot
β€’ 2 tbsp soy sauce
β€’ 1 tbsp sesame oil
β€’ 1 tsp finely chopped ginger
β€’ Juice of half a lime
β€’ 1 tsp honey
β€’ Fish eggs (e.g. salmon eggs or tobiko)

Spicy mango/passion fruit:
β€’ 1 passion fruit
β€’ Handful of mango (cut into small cubes)
β€’ 1/4 red pepper (finely chopped)
β€’ 1 tbsp soy sauce
β€’ Pinch of cayenne pepper

Preparation method:
Avocado cream & basil oil:
β€’ Make the avocado cream by blending the avocado, mascarpone, lime juice, salt and cooking cream until smooth with a hand blender.
β€’ For the basil oil: Puree the basil together with the sunflower oil and strain the mixture to obtain a clear oil.
β€’ Spoon a little avocado cream onto an oyster and drizzle with basil oil.

Asian showstopper:
β€’ Mix the finely chopped shallot with soy sauce, sesame oil, ginger, lime juice and honey.
β€’ Spoon a small amount of this mixture onto the oyster and garnish with fish roe for a luxurious touch.

Spicy mango/passion fruit:
β€’ Mix the passion fruit pulp with the mango cubes, red pepper, soy sauce and a pinch of cayenne pepper.
β€’ Spoon this topping onto oysters for a fresh, spicy kick.
