Thai noodle salad

A colorful, healthy salad packed with flavor! 🌈 With a peanut dressing so delicious you'll want to use it on everything. 🀩 P.S. For big eaters, add a few more noodles.

Ingredients for two people:
90 g rice noodles
Carrot in julienne (handful) πŸ₯•
Half a cucumber cut into stripsπŸ₯’
1 mango (sliced) πŸ₯­
Spring onion (finely chopped)
2 serving spoons of soy beans
1 lime πŸ‹

Peanut dressing:
1 tbsp 100% peanut butter πŸ₯œ
1 tbsp soy sauce
1 tsp honey
1 tsp ginger puree
1 tsp garlic puree
30 ml water (adjust to a smooth consistency)

Optional as a topping:
Finely chopped red pepper 🌢️
Fresh coriander 🌿

Preparation method:
Cook the rice noodles according to the package directions, rinse under cold water, and drain. Meanwhile, finely dice the carrot, cucumber, and mango. Blend all the ingredients for the peanut dressing until smooth. Add more water until the dressing is thin enough to drizzle over the top.

Mix the noodles with the vegetables and divide among plates. Drizzle generously with the peanut dressing. Garnish with red chili pepper, cilantro, and a lime wedge. πŸ‹
